O To Cauliflower
Everyone loves cauliflower! I am a huge fan. It’s a great vegetable that can be used in all sorts of recipes. I found myself creating this dish last summer, after I took a trip south. It was a very memorable trip. After all the BBQ’d meat I had in the south. I still wanted bourbon BBQ sauce but I desired to have it on some vegetables.
Cut the cauliflower into “steaks”. Meaning you cut one large piece of the cauliflower head off into slices. I like to smoke the cauliflower after I grill mark it. I have the equipment like a smoker but using your oven is just fine. Now it’s all about the sauce baby! The beautiful smoky BBQ sauce that makes you feel like it’s BBQ time! I use a bourbon BBQ sauce, it’s sweet and smoky flavor pairs so well with the char of the grill.
This cauliflower dish is one loved by patrons at the restaurant. We serve it with creamy grits and sauteed kale. Kale is also very healthy for you. A dark leafy green that is hearty during the winter time. Its a strong legume that holds up and grows even when it begins to snow. Farmers always offer it to me all winter long. Individuals were encouraged to grow kale during World War II. The cultivation of kale in the U.K. was encouraged by the Dig for Victory campaign. The vegetable was easy to grow and provided important nutrients to supplement those missing from a normal diet because of rationing.
This dish is so cool, it can even make a meat loving chef like myself krave it. I prefer it over meat sometimes. It’s sweet outer layer and the sensation of the silky flesh when you bite into it. With a finished smoky and long lingering flavor. This is a dish you don’t want to miss. Remember to shop local when you can. This dish is perfect for your holiday party.
- One head of cauliflower
- 2-3 Cups of your favorite BBQ Sauce
- Salt & Pepper
- Pan coating or olive oil
- Cooking tray
- Cutting board
- Chef Knife
- Take your cauliflower and remove the outer leaves
- Cut the cauliflower into 1 inch Slices
- Heat up your grill
- Spray your cauliflower or lather it in olive oil
- Grill each side of the cauliflower for 2 mins or until the desired amount of char is reached
- Brush each side of the cauliflower with the bbq sauce
- Heat your oven to 425 degrees
- Put your cauliflower on a cooking tray and bake for 15 mins or until the cauliflower is caramelized
Serve this dish as a side with your favorite protein or let it be the focus of your dish and serve it with a creamy starch. Garnish with chopped parsley.
