It Does Not Get Any Better Than Steak & Potatoes
Whenever we eat an animal we must treat it with respect and care. We love potatoes and wanted to use them in a comfort dish. Adding in a tasty seared steak that really took it to the next effin level. The steak is an American staple, from rib-eyes to short ribs the recipes are endless. While we enjoy more complex recipes, going back to basics with this rich and flavorful recipe. Less is more.
It does not get any better than steak and potatoes. The classic of steak dishes and something we all enjoy eating. Simple, fast and heavenly to eat after a long day. We did not fire up the grill and Chef Frank explained how to make this dish like a professional. Chef Frank pulled out his trustee cast iron skillet, one of his favor tools to use. If you do not have one, he suggests this. He added his amazing chimichurri as a sauce. Chef Frank believes that this is a restaurant-worthy meal that makes any date-night feel special. 8 oz sirloin steak
6 whole fingerlings potatoes
2 Tbsp finely chopped cilantro
3 Tbsp finely chopped parsley leaves
1 Tbsp finely chopped garlic
1 Tbsp finely chopped onion
1 tsp finely chopped jalapeño (red or green)
2 Tbsp butter
2 Tbsp salt
1 Tbsp fresh cracked pepper
¼ cup olive oil
¼ cup red wine vinegar
Two 10 inch cast iron skillet
Chef Knife and Cutting Board

Oven Pre-heated to 350 degrees
In a mixing bowl mix together parsley, cilantro, onion, jalapeño, olive oil 1 tsp salt, 1 tsp of pepper and vinegar. Stir crushing the herbs in the oil to blend flavors. Set aside
Pre-heat oven to 350 degrees
Iron skillet over a med heat melt 1 Tbsp butter
Cut your potatoes in half, season with 1 tsp salt and pepper.
Flesh side down cook the potatoes for 15 mins.
Transfer to the oven for 5 more mins
Heat up another cast iron skillet over a med heat and melt 1 tbsp butter
Season both sides of the sirloin with 1 tsp salt and pepper
Cook the steak in the cast iron pan for 3 mins on each side.
Cook for an extra 3 mins in the oven
Transfer to a cutting board so steak can rest.
While the steak is resting, get a nice plate or serving plate. Arrange the potatoes like a pile of boulders. Thinly carve the steak against the grain, on a bias than drape atop the potatoes. Finish the dish by take 2 Tbsp of the chimichurri across the steak. Serve immediately. Enjoy!
